Chicory-derived inulin

Chicory root (Cichorium intybus) is the established botanical source for food-grade inulin. It combines high extractable inulin content, scalable agriculture, and a chain-length profile suited to both liquid and solid foods.

1. Chicory source

Commercial inulin starts with chicory root because it is cultivated for inulin content, can be processed at scale, and has a long history of use in food applications across global markets.

2. Extraction

Harvested roots are washed and extracted — typically with hot water — to solubilise inulin from the plant matrix. Extraction conditions influence yield and the starting composition of the liquor before refining.

3. Purification

The extract is refined and purified to raise inulin content on dry basis and reduce residual non-inulin fractions. Purification is a primary driver of sensory neutrality, fibre declaration accuracy, and lot-to-lot consistency.

4. DP and product performance

Degree of polymerization (DP) describes the average chain length of the inulin fraction. Together with purity, DP influences how the powder dissolves, how it contributes body or mouthfeel, and how it behaves in wet vs dry systems. See DP & chain length for the technical explanation.

5. Why source and purification matter

Two products both labelled “inulin” can perform differently at the same use level if source quality, purification depth, inulin %, and DP profile differ. That is why formulators should evaluate supplier specifications — not only the ingredient name on the label.
